Ingredients:
- 1 boneless pork loin (about 2-3 pounds)
- 8-10 slices of bacon
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper, to taste
- 1/4 cup honey (**the key ingredient!)
- 1/4 cup brown sugar
- 2 tablespoons Dijon mustard
Instructions:
- Preheat your oven to 375°F (190°C).
- In a small bowl, mix the minced garlic, dried thyme, dried rosemary, olive oil, salt, and pepper to create a flavorful marinade.
- Rub the marinade all over the pork loin, making sure it’s evenly coated. Allow it to marinate for at least 30 minutes, or even overnight for better flavor.
- Lay out the bacon slices side by side on a clean surface, slightly overlapping each other. This will create a “bacon blanket” to wrap around the pork loin.
- Place the marinated pork loin on top of the bacon slices. Carefully wrap the bacon around the pork loin, securing it in place.
- Place the bacon-wrapped pork loin in a roasting pan or baking dish. If you have any remaining marinade, you can brush it over the bacon.
- In a small bowl, mix the honey, brown sugar, and Dijon mustard to create a glaze. Brush the glaze over the bacon-wrapped pork loin, ensuring it’s well coated.
- Roast the pork loin in the preheated oven for about 1 to 1.5 hours, or until the internal temperature reaches 145°F (63°C). Baste the pork with the drippings from the pan a couple of times during roasting.
- About 15 minutes before the pork is done, brush another layer of the honey glaze over the top of the bacon-wrapped pork loin.
- Once cooked, remove the pork loin from the oven and let it rest for about 10 minutes before slicing.
- Slice the honey-glazed bacon-wrapped pork loin into thick slices and serve it alongside your favorite sides.
